French Onion Soup Recipe
French onion soup isn't an easy French cuisine dish although the ingredients are simple. You have to be extremely patient as it can take at least 30 mins to caramelise onions. To make great French onion soup, the technique on cooking onions is crucial. If you find the onions sticky in your pot, you can add little water to help deglazing. It is a relaxing process and is also the key step of this dish.

Ingredients
600g onions
1L beef stock
120mL white wine
20g butter
10g flour
4 slices baguette
2 bay leaves
5 sprigs fresh thyme
40g grated Gruyere cheese
Instructions
1. Cut the onions into thin slices.
2. In a cast-iron pot, heat butter on medium heat. Add the onions and toss to coat with melted butter. Add 50mL of water and simmer for 15 mins with lid on until soften.
3. Cook the onions for 30 mins. Keep deglazing, and add little water if needed.
4. Once the onions become caramelised, add flour and stir well.
5. Add beef stock, bay leaves and fresh thymes, simmer for 15 mins. Add white wine and cook for 5 more mins.
6. Pour onion soup into bowls with a slice of baguette. Grate cheese and baked with 180°C for 5-8 mins until the cheese turns golden.
Tips
- Onions can be cooked perfectly with cast-iron pot as it heats evenly.
- Remember to deglaze often. Add water to help deglazing.
- You can replace Gruyere cheese with other cheese.
